Salsa slaw

Salsa Slaw

this is something we make quite often it accompanies fish are crab cakes very well.
1 bag coleslaw mix(calories 25 fat 0 protein 1.5)
Kraft coleslaw salad dressing(110 calories per serving)
Pico de Gallo( calories 2.5 fat and protein 0)

i just poor the bag of coleslaw mix in bowl then add a small amount of salad dressing really any kind i can find they make reduce fat but the small amount i use i don't stress about it. then i use fresh Pico de Gallo, if i can get this kind from Walmart produce i do or make my own let if chill for a bit.
we really like the little spicy taste it adds and the tomatoes are good taste for cleansing the pallet from the fish or grab....

Hummus

You might say,  "what does hummus have to do with potato salad?"
Well my answer is, "The same as it does with deviled eggs."

OK let me explain.

in making my potato salad tonight i did every thing as usual with the exception i cut my light mayo in half and added my favorite flavor of hummus.

now with deviled eggs take out half the yellow and mayo and replace with hummus.

light mayo has 49 calories, .13 grams of protein and 4.9 grams of fat.
hummus has 27 calories, .73 grams of protein and1.29 grams of fat.

not to mention. a flavored hummus can add a great hint of flavor to your food.....

just a tip

many people are like my mom who refuse to try something called

                     MorningStar Farms® Meal Starters® Grillers® Recipe Crumbles™

especially when the package says meat free.
here is a little trick i use to help out with cooking.
one pack = one lbs of uncooked ground beef.
i mix one lbs of lean ground turkey and one bag of crumbles.
makes a lot but the rest saved can be added to other dishes another day.
my mother has now stopped turning her nose up at trying a dish i made with it.
she is actually taking some of my cabbage to work with her for lunch tomorrow.
and the mixture i used in it was left from tacos last night.
you can mix it with ground beef  as well.

a serving size of the crumbles is 2/3 cup
that has 80 calories2.5 grams of fat
saturated fat and trans fat 0
carbs 5
and protein 10

mixed with

                                                    Honeysuckle White

99% Fat Free Extra Lean Ground Turkey Breast

4 servings in a 1 lbs pack
calories 130
carbs 0
fat 7.5
protein 135

like for our tacos the serving size was a lot less.
so less guilt i feel eating it.
but even if u eat the serving size your 130 calories from the turkey turns into 105
a 25 calorie difference.

Turkey Bacon wrapped stuffed banana peppers.

12 banana peppers (tops cut seeded and sliced down side)
1 lb turkey sausage (serving size 4oz 250 calories)
1 cup feta cheese(serving size 1/4 cup 90 calories)
2 tbsp Parmesan cheese(40 calories)
one egg
12 strips turkey bacon(1 strip 25 calories)
tooth picks
marinara sauce(optional)

first i cut and seeded and washed the banana peppers.
next in a small pan cooked down the ground turkey sausage.
after browning i removed from fire and stirred in one egg and crumbled feta cheese and reduce fat parmesan cheese.
after stuffing the peppers we then wrapped each one with a strip of turkey bacon (using tooth picks to hole in place)
we then sprayed a pan with olive oil then placed all completed peppers on the pan then sprayed the tops lightly with olive oil.
we then baked the in oven for 20-30 min.
i laid a small amount of marinara sauce in bottom of a serving tray and set the cooked peppers on top.

we served this with home made baked macaroni and home made rice pilaf using yellow saffron rice. what a great dinner it was.
